AN EASTER RECIPE FROM CATHY WEIR


A few months ago several of us went over to Cathy Weir's home in Street Maryland. We had a great time crafting, but an even better time being together and of course sharing lunch together. Cathy made the most delicious Chicken Divan. I asked her for the recipe and she gave it to me awhile ago. I thought it might be fun to make this week. Here you go:



Chicken Divan by Cathy Weir


5 to 6 boneless chicken breast cubed and cooked.

One large head of broccoli or one large bag of frozen broccoli spears cooked.

2 cans of cream of chicken soup

2/3 cup of mayo

1 tsp lemon juice and a two cup bag of shredded cheddar cheese.


Mix cream of chicken soup, the mayo,lemon juice, put chicken in 9x 13 pan spoon mayo and soup mixture over chicken, mix about two cups of pepperidge farms stuffing mix with 1/2 stick of melted butter. Sprinkle cheese over soup mixture and top WITH STUFFING MIX AND BAKE AT 350 DEGREES FOR 30 MINUTES
